Gilt offers popular yet experimental fare in a dining room whose floor is covered with orange rubber overlays, while the bar exudes the quirky ambience ofa lunar lander thanks to the placement of a giant plastic honeycomb sculpture. Billed as a three-course prix fixe on the menu, the meal includes at least a half-dozen extra courses—which helps justify the $78 price. The ridestarts with a series of amuse-bouches; hibiscus-covered marshmallows melt on the tongue and beet-flavored tuiles taste like candy. One terrific appetizer wraps a crabmeat-and-gingerbread filling in a transparent fish gelée, bracketed sandwich-style with dried-seaweed crackers. The only drawback is that wine choices lean on toomany big-ticket French bottles and not enough double-digit options
