Seasonal produce shapes the menu of executive chef Ignacio Mattos (Chez Panisse, Spotted Pig). Dunk the warm country bread in Umbrian olive oils produced exclusively for il Buco. Primi include porcetta alla romana, slow-roasted pig with white polenta and sauteed Tuscan black kale, or Dijon-crusted Meiller Farm lamb chop and leg with puntarelle.
