5 New York State grapes
1 fig
1 tsp elderflower essence
2 oz unfermented grape juice
1 oz bourbon
Splash of fresh lime juice
1 tsp fresh sugarcane juice
Crush and slightly muddle the fruit in the bourbon. Put everything in a shaker, add ice and shake gently. Pour over one ice cube in a glass with a few pieces of fruit.
“In Austria, winemakers use unfermented grape juice in the fall. I get a batch from the East End vineyard every week. I also use a sugarcane press from Guatemala. If you compare a drink with fresh-pressed cane juice to one with simple syrup, you really taste the difference.”
